| Ingredients
for marinade
1 cup olive oil
1/2 cup dijon mustard
1 T. garlic
1/2 T. cumin
1 T. Old Bay Seasoning or Johnnys Seasoned Salt (I prefer
Old Bay.)

Preparation:
Mix ingredients well using blender or hand mixer.
Marinate fish in mixture for no less than 1 hour-longer for a stronger
flavor.
Cooking:
Bake in oven on broiler pan to drain off fat or in a charcoal
barbeque - not a propane barbeque, it's just not as flavorful.
I like the skin to be slightly blackened on the barbeque . . . just
slightly. |
